Chop up whatever veggies you want, use a carton of organic chicken stock, a little extra virgin olive oil maybe 2 tbsp, 2 or 3 cans of stewed tomatoes of your choice, 2 garlic cloves pressed, 1 tsp sea salt, 1 tsp pepper.
Cook on medium heat until it starts to boil and turn it down to low and let it simmer at least 2 hours.
You can add chopped potatoes ½ hr before it is done or you can add noodles. I personally like both and sometimes just put rice in it or sometimes I put nothing in except the veggies. This freezes very nicely. 🙂
