3-6 stocks Baby Bok Choy cut up and washed and cleaned

1 pound of Mushroom sliced and cleaned – I buy Japanese mushrooms they are quite expensive but delicious

1 stock celery cut up into chunks

6 large tomatoes cut in chunks

2 garlic cloves shredded

2 yellow peppers cut in chunks

2 orange peppers cut in chunks

(do not use red or green peppers because they give off a completely different flavor)

½ bag baby carrots cut up in chunks

2 zucchini cut up in chunks

1 large white onion cut in chunks

about 3 ½ inch slices of ginger root shredded

1 to 2 cups organic chicken stock – I buy mine at Costco

2 cans stewed tomatoes whatever flavor you like

Mix all your ingredients in large soup pan and cook until it comes to a boil, simmer for 2 hours on lowest heat

You can serve this over rice, noodles, mashed potatoes or eat it just like it is.  It is very tasty without any seasonings.  I do not use seasonings but you can salt and pepper to taste.
